Antimicrobial Activity

The broad spectrum of activity is explained by the unique ability of AITC to damage yeast cell membranes, inhibit the growth of moulds, and, to a certain extent, reduce the growth of certain acid-resistant bacteria responsible for food spoilage.

Antimicrobial spectrum: AITC demonstrates activity against yeasts, moulds and certain food-spoilage bacteria, making it of particular interest for processed food preservation.

Regulatory Status

AITC has the status:

“Generally Recognized as Safe for use in food when used in accordance with good manufacturing practice” (Generally Recognized as Safe, GRAS).

In addition, it is registered as a food additive.
